A seasonal selection of  different cheeses curated by the cheesemaker to represent our range, from fresh delights to longer shelf life preserved cheeses. Your opportunity to try a variety of flavors and textures at a great price

Foster Fetish – Sheep milk traditional style feta – marinated in olive /canola oil blend with Rosemary, garlic and mixed herbs

Cheviot – A semi-hard ewes-milk cheese, Cheviot is aged anaerobically for 12 months. Slow yeast fermentation creates a fruity tang in the firm but smooth, close textured paste. Great lively cheese for a cheeseboard or to be shaved in a salad. A less salty alternative to feta. Vegetarian rennet.

Powlett Reserve has a texture that slices well, a mild but lingering flavour, and clean acid finish. Cellared for over 4 months, the natural rind has a light coat of surface flora. Textually a robust, hearty cheese, while the taste remains mild with a clean savory finish. Serve on a neutral cracker with olive tapenade or pesto. Ideal melting cheese.  (cows milk cheese)

Wattlebank Mist – Cow’s milk camembert style – or depending on ripeness this may be substituted for Woolamai Mist – Sheep milk

Prom Country Cheese

Prom Country Cheese is owned and run by 2nd generation cheesemakers Bronwyn & Burke Brandon and their children from their fertile, regenerative farm in the beautiful hills of South Gippsland. Here the focus is production of premium sheep milk for cheesemaking in the purpose-built cheese rooms in the paddock above the dairy, and showcasing its transformation into distinctive regional cheese. Sustainable, natural and ethical farming techniques combine with simple raw ingredients to create a wide range of traditional, whole-some cheeses. Made seasonally with fresh pasture-fed, single origin milk, which is handled gently in small batches and un-pasteurised to preserve its natural qualities. The first premises in Victoria to be licensed to produce raw milk cheese, which captures diverse microflora from a unique time and place. Located near the Western gateway to Prom Country, cheese names are inspired by the story behind their origin.
The family are involved in the entire process from growing the pastures, to breeding and milking, handcrafting the cheese, then proudly presenting the final products to you.

Milk from a nearby certified organic farm is also made into a small range of cow’s milk cheeses to help support the local dairy community. Prom Country Cheese’s long list of awards include 2017 & 2020 Australian Grand Dairy Awards Champion sheep cheese and 2016 Australian Food Awards Champion Dairy Product, for their signature cheese ‘Venus Blue’.
