Hand made in small batches we use Ruby Hills organic eggs to make our mayonnaise because we know just how happy and contented those hens are – it shows in every mouthful. Along with grapeseed oil, we add just a touch of local Gippsland olive oil to flavour, some Dijon mustard, a squeeze of lemon juice, some salt flakes and that is it. With no added preservatives or artificial additives, our mayonnaise must be refrigerated, where it will last for 2 weeks.
